Chef Bobby Flay. Gotta love him. Chef Flay may know cheese,
but he was introduced to a new (to him, anyway) Wisconsin
delicacy
last week – deep-fried

the curd. Which is understandable with such a tasty subject.
Lee Dobbins is doing a little bloggin as well on, as he
puts it, "a new look at a fun but
mostly forgotten food - cheese curds!" (A personal note

Food is a favorite at any fair. And thanks to heros like
Mike Whiteside of Mike's Cheese Shop of Eau Claire, Wisconsin,
people attending fairs in far-off places like the Van Wert
County Fair in Ohio are able to enjoy hot, gooey, delicious,
deep-fried Wisconsin Cheese Curds. Mike, in my humble curdpinion,
you RULE!

rubbery. It can be only one thing: Wisconsin's oddly beloved
cheese
curds. Curds are like miniature works of art - chunks of
young cheddar separated from whey and then salted, but
not yet pressed into blocks, which explains their random
shapes and sizes. Not many people can eat just one."

Mullins Cheese owner Bill Mullins said
that his 36 years in the cheese business has showed him
just how people like their curds.
"Fresh and Squeaky. That's the key," said Mullins,
who also enjoys deep-fried cheese curds.

cheese curds—you’ve got something to look forward
to! Sold largely in Wisconsin, cheese curds have not been
widely distributed because they need to be eaten fresh."

Curd Capital of Wisconsin?" Where is it you ask? It
is located at the Ellsworth
Dairy Cooperative in the Heart
of Wisconsin's Dairyland in the town of Ellsworth, Wisconsin,
and was proclaimed the "Cheese Curd Capital of Wisconsin" by
Governor Anthony S. Earl in 1984.
